Coconut Quinoa & Blueberries

Description

You could cook the quinoa the night before and put in the fridge (I usually have a container of plain quinoa in my fridge to use at the last minute). It would be very easy to heat up the coconut milk in the morning and then tip the quinoa. Stir until heated through or how about it just stirred together, fridge cold, in the summer?

Ingredients


50g Quinoa (uncooked)
4 tsp Blueberries
1 cup Coconut milk (any kind, carton or light tin)
1 tsp Coconut Flakes (toasted)
1 tsp Chia Seeds
1 tsp Honey
1 tsp Flaxseeds

Cook the quinoa in double the amount of water, for 15-20 minutes until little "sprouts" come out. Stir through the coconut milk, honey, flaxseeds and chia. Sprinkle over the coconut flakes and blueberries and enjoy hot or cold.
