Pine Nut and Seaweed Granita

Not a fan of the sweetness of ice-cream? Or maybe you just want something a little different? This crushed, icy, deliciously savoury, crunchy and sweet slush, is definitely one to try. It is so refreshing for a snack, part of a meal or is a great "dinner party" palate cleanser.

I initially developed this as part of a vegan biscuit recipe, but after I had a little taste before the flour went in, I thought this would be wonderful as an ice-cream! Some more coconut milk went in and wow, this was lucky it made it to the "photo table"!!!

Easy to do and no ice-cream machine needed. Just a plastic container, a fork and the ingredients.

Recipe & Instructions

  • 2 Nori Sheets
  • 2 tbsp Pine Nut Butter (if you can't source this, almond butter would be fine)
  • 1 tsp maple syrup
  • 1 cup of coconut milk (or any other nut milk)


Toast the Nori sheets until they are brittle, and crush in to a plastic container that has a lid. Mix in the pine nut butter, maple syrup and milk and give a good stir until well combined. Pop the lid on and put in the freezer for 2-3 hours.

When frozen, get you fork in and rough it up! When there are quite small chunks and it is beginning to melt, find a pretty dish and serve - how about using some triangles of more toasted nori sheets as wafers?
