Breakfast Ice Cream? Don't mind If I DO!

Hot after a run and wanting something quick for breakfast, this seemed to fall in to place!

Frozen bananas really are a good friend to keep in the freezer and I now never have to cook the "Panic Banana Bread" (recipe coming) - you now the one, you're standing over the bin with an almost rotten, festering bunch of bananas, feeling the need to keep up with the "no food waste" ethos, but you don't have time to make it! However, you're really going to have to as they are likely to have their own their own legs, teeth and hair by the end of the day!

So, I still enjoy choosing to make my breads (especially when eaten with a dollop of greek yoghurt and maple syrup) but I make them when I have time to now, and make them extra special.

So, back to the ice-cream, why not for breakfast? I only used a few ingredients I use for breakfast, so it's all fair if you ask me.

Recipe & Instructions

1 frozen banana
1 tbsp low fat greek yoghurt
1Splash of water
1 tbsp Protein Powder

1 Tbsp Protein Granola

Whizz the banana, yoghurt, water (to loosen a bit id needed) and the powder together in a small food processor or smoothie maker (you may need to do double quantity, so make one for a friend, if you find it easier to whizz with a bigger quantity - I preserve with the singles quantity as I know I will just eat it ALL).

Immediately add to a bowl and sprinkle over the granola. TASTY!
