Protein Granola (the vegan one)

Description

This beats the sugary, buttery granola out there in ready made bags. It's high in protein, low in sugar and great to sprinkle on porridge, over night oats, Greek yoghurt, frozen yoghurts and thrown into smoothies. All things in moderation still but it's packed with the right stuff to perk things up!

Recipe & Instructions

Ingredients

  • 3 tbsp Coconut Oil
  • 2 tbsp Maple Syrup
  • 2 tbsp Protein Powder
  • 3 tbsp Ground Flaxseed
  • 2 tbsp Pumpkin Seeds
  • 1 tbsp Sunflower Seeds
  • 4 tbsp Puffed Rice Cereal
  • 125g Jumbo Oats

Melt the oil and maple syrup together in a saucepan. Add the other ingredients, stirring over a high heat to make everything toasted for 6-8 minutes, careful to not let it burn.

Cool on a cold plate and store in an air tight container.
