Dark Chocolate and Blackcurrant Clafoutis

Description

This is a low fat, low sugar dessert that still feels a bit like a proper treat. No added nasties,no process sugars and made from scratch in minutes and really tasty.

You can use other fruits in this if you like, raspberries and cherries do go very well but you may need to reduce the sweetener a little.

Recipe & Instructions

Serves 4

  • 3 eggs
  • 150ml milk (any kind)
  • 4 tbsp coconut sugar or maple/agave syrup
  • 40g self raising flour
  • 1 tbsp cocoa powder (a good quality dark one is best)
  • 3 heaped tbsp of frozen blackcurrants (or any frozen fruit)
  • 1 tsp olive oil, or use a spray or non-stick frying pan

Heat the pan up with the oil (if using) and heat the grill up too.

Beat all of the ingredients together apart from the fruit, until you have a smooth batter.

Pour into the hot pan and scatter over the fruit so it is evenly distributed.

Heat over a medium heat for 5-6 minutes and then transfer to the oven/grill to finish cooking the top for 3-4 minutes If your pan isn't ovenproof, be careful of the handle and protect where necessary.

Remove from the heat and allow to cool slightly. Cut in to 4 wedges.

Could serve this with low fat creme fraiche or yoghurt if you like.
