Cheese and Onion Soda Bread

Description

This is the easiest gluten free bread to make and quick too! I cook this for my non-coeliac family for a great addition to a soup, just because it's a slightly different texture from the usual flour and good to consume a variety of grains and seeds.

Much better than any shop brought gluten free loaf and cheaper too, especially by making your own oat flour, as I have done here.

Recipe & Instructions

  • 120g Oats
  • 90g Cheddar
  • 2 Onions
  • Pinch sugar
  • 1 tsp GF Baking Powder
  • ½ tsp Bicarbonate Soda
  • 1 egg
  • 3 tbsp natural yoghurt fat free or normal
  • Pinch of Sea Salt/Himalayan pink salt


Chop the onions in half and slice in to half rings. Place in a saucepan with a pinch of sugar and splash of water and cook until lightly coloured and soft (10-15 minutes)

Grind the oats in a blender or food processor until finely ground. Chop the cheese roughly and add to the blender and blend until grated through the oat flour. Stir in the baking powder and bicarbonate of soda.

Mix the egg with the yoghurt.

Mix the onions and egg mix in to the dry ingredients. Shape in to a ball and flatten down. Sprinkle some oats on top if liked. Bake at 200 degrees for 30 mins until the bread feels firm and cooked. Cut in to 8 wedges.
