The Best "Go With Anything" Spiced Pumpkin Seed Rice

This is a fantastic recipe to have up your sleeve. It goes with anything (just about), it's quick, uses store cupboard ingredients, your family SHOULD love it, it could be used as a vegan dish, your lunch, left in the fridge to use hot, cold or as "dirty rice dish" base for breakfast. How could you NOT give this a go?
Recipe & Instructions
- 200g Brown Wholemeal Basmati (you could use white if you need to)
- 800ml Boiling Water
- 1 tsp Swiss Vegetable Vegan Boullion Powder
- 1 tsp Garam Masala
- 1/2 tsp Cinnamon
- 1 tsp Turmeric
- 2 tbsp Sun Dried Tomatoes, chopped (you could use sultanas)
- 1 tbsp Pumpkin Seeds (toasted)
Rinse the rice, add all the ingredients, except the pumpkin seeds to a lidded saucepan. Bring to a boil, cover with the lid and simmer for 20 minutes until the water is absorbed and the rice cooked. Fluff up with a fork and try not to stir until the end of the cooking time. Stir through the seeds and serve with whatever and however, you like!
