Honey and Miso Baked Cod

Description

This is wonderfully light and tasty meal, perfect for the day after an eating spree! Give yourself a little rest as this is easy to cook and easy on the stomach.

Serve the fish with some broccoli or cauliflower rice to keep the carbohydrates low and this will also give you a lovely portion of vegetables to boost the 5-A-Day.

Recipe & Instructions

Serves 2

2 cod fillets (you can use any white, flakey fish here, but make sure it's from a sustainable source)
3 tbsp soy sauce
2 tbsp miso paste
1 tbsp honey
1/2 lime, zest and juice


Pre-heat the oven to 200°C/Gas Mark 5 and grease a small baking dish.

Mix the soy, miso, honey and lime together.

Place the fish into the baking dish and pour over the sauce. You can do this in advance if you like, or cook straight away.

Bake, uncovered for 10-15 minutes, until the fish is cooked and the sauce has caramelised a little.

Serve with vegetable rice or a green salad.
