Baked Egg Pot

Description

This is a quick little number that is so good for you! You could place this in the oven as you make a cup of tea, toast a muffin and pack your bags/shout at the children. It's not much harder than tipping out the dreaded cereal in to a bowl and pouring milk on. This is a functional breakfast though and will give your dopamine production a boost...a smile on the way?

Recipe & Instructions

Serves 1

1 egg
1small handful of baby spinach leaves
1 tbsp quark
1 tsp nutritional yeast flakes
1 tbsp grated parmesan cheese

Place the spinach leaves in a small, greased ramekin. Break the egg carefully on top. Dollop the quark on top to cover the egg. Sprinkle over all of the cheese and yeast flakes. Season with salt and pepper. Place in the oven at 200 for 7-8 minutes until cooked to your liking. I like a really runny yolk to mix with that really salty topping.
