Cookie Pie

Description

A reduced sugar and reduced fat dessert that still tastes like a treat? This is it! This recipe has been tried and tested reducing some of the ingredients that we perhaps want to eat a little less of and it still creates a lovely dessert.

Cookie Pie
serves 8-10

Pastry
230g plain flour
80g butter, diced
3 tbsp olive oil
1 tbsp brown sugar

Filling
75g brown sugar
75g caster sugar
100g softened butter
2 eggs
1 tbsp vanilla extract
120g plain flour
1 tap baking powder
2 tbsp milk
100g dark chocolate, chopped
75g walnuts or pecans, chopped (optional)

Instructions

Pre-heat the oven to 190C and grease a medium flan/tart dish.

In a bowl add the pastry ingredients and rub the butter in, to create breadcrumbs. Add enough water to create a dough. Roll out and line the flan/tart dish.

Beat the sugars and butter together. Add the eggs and vanilla extract and beat well. Mix in the flour, baking powder and milk and then stir in the chocolate and nuts.

Add the filling to the tart dish and bake for 20-25 minutes until risen and golden.

This is delicious served warm with a dollop of frozen yogurt!
