Gooseberry and Mint Crush
A glut of gooseberries from an over zealous "pick your own" session may see you reaching for this recipe!
Pure summer in a pitcher made to share, stuffed with mint and ice and ready to enjoy on the hottest of summer days.
I'll be honest, this is a time when it's ok to indulge. My children love this drink, taken in its pure form, but I love this drink....in it's added prosecco form!! Or may be a gin should be added or any other tipple you are quite drawn too?
After a long week cooking and writing, relaxing with one of these in a garden full of summer aromas is one of life's pleasures. Enjoy x
Recipe & Instructions
- 450g fresh gooseberries
- 4 tbsp maple syrup
- 1 lemon - juice only
- 15 mint leaves
- 300ml water
- A large handful of ice
- a few sprigs of mint and extra ice to serve
Whizz all ingredients in a blender, pour in to a pretty pitcher/jug. This could be served straight away but is even more refreshing when chilled for an hour.
Take to a handful of friends or/and family and enjoy chilled with extra ice and mint.
If you're adding alcohol to this...just ignore and enjoy ;-)
