Smoked Salmon Tartare with Cucumber Mint Cream
Description
You sometimes just need a "feel good" lunch or light tea, and this is it! The flavours are so fresh and vibrant you are uplifted from the first mouthful.
Omega-3 from the smoked salmon gives you such a hit of brain food and dopamine fuel and this recipe uses just trimmings, so not a big price either. The cucumber is packed of multiple B Vitamins which adds to combating stress and anxiety - so FEEL GOOD and try it!

Ingredients
For The Salmon Tartare
250g smoked salmon trimmings
2 tbsp creme fraiche
1 tsp chopped fresh dill (plus extra for garnish)
1 tsp chopped capers
Juice of 2 lemons
1 tsp chopped chives
For the Cucumber Cream
2 cucumbers
1 tbsp fresh mint leaves
2 tbsp creme fraiche
Sea Salt to taste
Chop the smoked salmon in small pieces and mix with the other ingredients. Store in the fridge until ready to serve.
Use a mandolin or peeler, to remove 4 long, thin slices of cucumber and set aside. Chop all the rest of the cucumber and the other one roughly. Add the creme fraiche, mint and sea salt to a cucumber in a food processor and whizz until smooth. Pass through a sieve it you need to.
To serve, plate the salmon in a circle (use a pastry cutter or dessert ring if you'd like to be really chef like!). Spoon the cucumber cream around the outside. Place a rolled up piece of sliced cucumber on top and garnish with the dill. Enjoy served cold.
