Pizza Chicken Bake

Description

If you like pizza and you like chicken, you'll love this. It's a good one to serve the whole family as it's quite a popular flavour! Plus, it's easy and quick...my sort of meal.

Use the ricotta leftovers from the Lemon Chicken dish here, hate waste!

Recipe & Instructions

Serves 4

4 Chicken Breasts, flattened
1 small jar of Pesto, any you like
200g of Ricotta (you could use cream cheese if you like)
Small Punnet of Baby Plum Tomatoes, halved
4 tbsp Parmesan Cheese (or substitute with cheddar or mozzarella)
Torn Basil Leaves to Serve

Steamed Vegetables to Serve
Crusty, ciabatta style bread to serve

Pre-heat the oven to 200°C.

Grease or line a very shallow baking tray big enough to take all of the chicken breasts and place the breasts on.

Mix the ricotta and pesto together and spread, evenly over the chicken breasts. Place in the oven for 20 minutes to bake.

Remove from the oven, sprinkle over the grated cheese and add the baby tomatoes to the tray. Return to the oven for 5 minutes, until the cheese is golden and bubbling, the chicken is cooked and the tomatoes sweet and soft.
