Quick Lunch Rice Gratin
Description
With so many pre-cooked pouches of rice and grains available to us, a meal can be put together so quickly. Choose different grains and give your body the luxury of enjoying a variety of nutrition and proteins, to keep your stomach as healthy as possible.
Recipe & Instructions
Serves 2
- 1x 250g pouch of cooked rice (brown basmati, mixed grains such as buckwheat, quinoa, etc.)
- 200g spinach leaves, washed
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp pesto
- 2 eggs and 100ml milk, beaten together
- Large pinch of salt
- 2 tbsp parmesan cheese
Pre-heat the oven to 220°C/Gas Mark 7 and grease two small casserole dishes (or 1 large one).
Add the spinach to a medium saucepan and stir over a low heat until the leaves are almost wilted.
Open the pouch of rice/grain and tip in to the saucepan. Stir in the powders and heat through a little.
Pour in the egg mix, salt and the pesto and combine well.
Pour in to the casserole dishes and sprinkle over 1 tbsp of parmesan cheese over the top of each.
Bake in the oven for 15 minutes, or until golden.
Serve with rocket leaves/salad.
