Pesto Pasta

Description

This must be the quickest pasta dish going and its makes a change if you a little tired of the usual "tomato sauce pasta". It can be eaten hot, or cold for lunch and the flavours changed to suit you and whatever is in your fridge/store cupboard.

Don't opt for shop brought pesto every time, as this recipe is a great adaption what has less fat in it, plus you can use whatever herb you like if basil isn't your favourite.

Recipe & Instructions

150g pasta shapes (any)
1 small jar of pesto OR

Pesto Sauce
100g coriander
50g cashews (or other nut)
3 tbsp lemon juice
3 tbsp olive oil
1 tbsp parmesan cheese, grated OR 1 tbsp nutritional yeast

Optional Toppings
Extra nuts, seeds, tomatoes,spinach leaves, nori sheets shredded, extra cheese or nutritional yeast


Cook the pasta as instructed on the packet.

If making your own, place the pesto ingredients in to a little blender and process until a coarse mix has developed. Add a little salt and pepper to taste.

Drain the pasta and stir in the pesto. You may not want to use it all so place in a container in the fridge if so.

Divide between two bowls and add whatever topping you like.
