Energy Bites

These are great to pop in a food bag and take out in your handbag, They have saved me many times from ending up in a bakery, supermarket or newsagent sweet/crisp rack when my hunger has taken over. These have the benefit of being NO ADDED SUGAR so don't expect the "low" you'd normally experience from a sugary snack high!


Ingredients

<2 tbsp Coconut Oil
<1 egg beaten
<1 tbsp Chia Seeds
<40g Dried Dates chopped finely
<100g Jumbo Oats
<50g Wholemeal Plain Flour
<2 tbsp Protein Powder
<1 tbsp Ground Flaxseeds
<1 tsp Sunflower Seeds

Heat the oil in a medium saucepan. Add the dates and stir over a low heat until they have become soft and mushy. Leave to cool briefly, add the beaten egg, oats, sunflower seeds, flour, chia seeds and flaxseeds. Roll in to 10 balls. Bake on a baking sheet - 180 degrees for 15-20 minutes, until golden and cooked through.
