Sweet Potato Waffles

Description

I make these for lunch or breakfast (serve with poached eggs) and double the recipe for leftovers for the fridge or freezer. These are a great, sugar free snack, just the one, toasted! It can see you through a hungry moment and much better than any biscuit or bag of crisps. You could griddle or pan fry these if you don't have a waffle maker.

Ingredients

400g grated sweet potatoes (about 4 large ones)
1 tsp of sea salt
2 tbsp of plain flour
2 eggs
(spring onions, red onion, red pepper, if you have any or fancy a change)

Squeeze as much water out of the potatoes as you can. Mix in the flour and eggs. Heat the waffle maker/griddle. Spray with olive oil and cook spoonfuls until soft in the middle and crispy on the outside. Refresh them in the toaster if you're dealing with leftovers from a previous batch!
