Description

Okay, the name is a little fun, but your children just may skip to school with them in their bag, eager to chew on them at the earliest break. They have over half the average sugar content a cereal bar has and loads of good stuff and protein to keep them concentrating until the next meal. A great handbag/bag in a car stand by for you too!

Ingredients

<1 tbsp Coconut Oil
<75g Dried Apricots
<50g Dates
<1 tbsp Agave Syrup/Brown Rice Syrup/golden syrup
<2 tbsp Honey
<100ml apple/orange juice or even just water
<1 tbsp Chia Seeds
<1 tbsp Protein Powder
<100g Plain Flour
<100g Self Raising Flour
<1 egg beaten
<200g Quick Cook Porridge Oats

Makes 15

Heat the oil, apricots, dates, water/juice, syrup and honey in a medium saucepan. Simmer for 10 minutes and then use a hand blender to create a smooth, sticky mixture. Add the dry ingredients and the beaten egg. Mix thoroughly and then blob 15 spoons of mixture on a baking sheet. Use the back of a wet spoon (keep dipping in a cup of water), squash each spoonful down to create a lovely thin, flat biscuit. Bake at 180 degrees for 20 minutes until crisp and golden. Cool on a rack - these become lovely a chewy as they cool.
