Honey and Sesame Cookies

Description

Made with quinoa flour, this cookie is packed with protein! Honey is the only sweetener and with the added rye flour (you can swop this for any gluten-free option if you'd like), we are back to basics with ingredients that have little processing or messing about with.

I've added a cinnamon to also aid the lowering of blood sugar and the tahini adds a dose of B Vitamins and calcium. All in 130 calories? A pretty good pit stop I reckon!

Ingredients

  • 1 tbsp Coconut Oil
  • 1 tbsp Tahini
  • 4 tbsp Honey
  • 60g Oats
  • 100g Quinoa Flour
  • 2 tsp Cinnamon
  • 70g Rye Flour (or any gluten-free flour if you'd like)
  • 4 tbsp Almond/oat/cows Milk - whatever your diet/fridge allows
  • 1 Egg
  • 1 tbsp Sesame Seeds

Heat the oil with the tahini and honey until smooth and runny. Add all the other ingredients, apart from the sesame seeds. Put 10 equal spoonfuls of the mixture own to a greased baking sheet, smooth down with a wet spoon. Sprinkle over the sesame seeds and bake at 180 degrees for 20 minutes, until lightly coloured and crisp.

Micro Organisation tip - make these whilst you're boiling the kettle for a cuppa, and drink your drink whilst they're cooking - there really is no need to be reaching for a sugar laden, low fat, processed cereal bar! Wrap these ready to take in your bag as an emergency if you like..
