Blender Cookies

Blackberry and Chocolate


These cookies are made in minutes and are great for a lunchbox snack. Gluten free, soft and gooey with no processed sugars...

Recipe & Instructions

5 tbsp desiccated coconut
4 tbsp blackberries, plus extra for sprinkling
6 tbsp rolled oats
+ 4 tbsp rolled oats (for stirring through)
2 tbsp maple syrup or honey
1 tbsp coconut oil
2 tbsp milk
1 tbsp flaxseed
2 tbsp cocoa nibs plus extra for sprinkling

Place all of the ingredients into a bullet blender, except the 4 tbsp oats extra and the cocoa nibs.

Process until smooth.

Stir in the extra oats and cocoa nibs.

Dollop spoonfuls onto a baking tray, flatten a little and sprinkle over extra blackberries and cocoa nibs.

Bake for 15 minutes until cooked but still soft.

Eat within 3 days.
