Odds and Ends Cookies

Description

When there are scraps of cereal box contents hanging about, dried fruit, the odd dead banana, these cookies are perfect to put together. It's a great way to the give the store cupboard and spring clean, any time of the year. You can use whatever sweetener you have but try to stay away from the processed sugars and the high sugared cereals - all things in moderation and you will find you can enjoy a bit of everything, always.

Recipe & Instructions

  • 2 eggs, beaten
  • 110g dairy free butter low fat spread, melted
  • 4 tbsp maple syrup/agave syrup/brown rice syrup/honey
  • 1 dead banana, mashed
  • 150g rolled oats or low fat/sugar granola
  • 100g self raising flour
  • 150g of ANY mix of dried fruits, and/or low sugar cereals, such as cornflakes, Shreddies, puffed rice.


Pre-heat the oven to 200°C/Gas Mark 6 and line or grease a baking tray.

Beat the eggs, butter, syrup and banana together until well combined.

Mix the remaining ingredients in to the bowl and scoop 10 spoonfuls on to the baking tray. Bake for 15-20 minutes until golden and crunchy on top.
