Honey and Banana Protein Cookies

Description

These cookies are really easy to make and full of fantastic nutrition. The chia seeds are a great source of protein and healthy omega 3 fats and provide an extra boost of energy. Use whatever protein powder you like (we used hemp for this recipe) and enjoy some low sugar snacking.

Recipe & Instructions

  • 3 tsp honey
  • 1 egg
  • 1 banana
  • 90g butter/dairy free spread, melted
  • 1 tbsp protein powder
  • 2 tbsp chia seeds
  • 110g rolled oats
  • 80g self raising flour

Pre-heat the oven to 200°C/Gas Mark 6 and line or grease a baking tray.

Beat the egg, honey, butter and banana together to make a smooth batter.

Stir in the chia seeds, protein powder, oats and flour and mix well.

Drop 10 spoonfuls of the mix on the baking tray and flatten a little with the back of a spoon. Bake for 15-20 mi until until coloured and cooked.
