Blueberry Mini Loaves

Description

These mini loaves are great for making ahead of time. You could add what fruits you like and then store them in the freezer for each day of the week.

Recipe & Instructions

  • 150g of blueberries
  • 2 tbsp flaxseed mixed with 2 tbsp hot water
  • 1 tbsp agave syrup
  • 100ml dairy free milk
  • 200g coconut yoghurt
  • 170g plain flour (gluten free if needed)
  • 1 tsp baking soda
  • 50g of desiccated coconut
  • 3 tbsp coconut sugar



Instructions

Pre-heat the oven to 190°C/Gas Mark 5 and grease small individual loaf pans (or you could use 9 muffin cases).

Mix the flaxseed, agave, milk and yoghurt together and stir in the blueberries.

Combine the flour, baking soda, coconut and coconut sugar together and pour into the loaf tins or muffin cases.

Bake for 15-18 minutes until risen and golden.
