Chocolate and Coconut Slice

This recipe was in developed in collaboration with The Daily Bread in Northampton. Created for a Vegan and Gluten Free tasting session, this slice so easy to make and can be enjoyed by all diet types. It uses no processed sweetners and it's relatively low in sugar too, compared to other snacks.

Recipe & Instructions

  • 100g desiccated coconut
  • 50g flaked coconut
  • 125g gluten free plain flour
  • 1 tsp gluten free baking powder
  • 20g cornflour
  • 6 tbsp coconut sugar
  • 3 tbsp cocoa powder
  • 4 tbsp Cacao nibs
  • 4 tbsp coconut oil, melted
  • 2 tbsp flaxseed, mixed with 2 tbsp water
  • 300ml coconut milk
  • 200g vegan chocolate

Instructions

Pre-heat the oven to 190°C/Gas Mark 5 and line an 8"x8" baking tray (or equivalent).

Mix the coconut flakes, desiccated coconut, sugar, flour, baking powder, cornflour, cocoa powder and cacao nibs together in a bowl.

Add the coconut oil and flaxseed mix and stir well to combine. Beat in the coconut milk to form a smooth mix and pour in to the baking tray.

Bake for 15-20 minutes. You don't want to overcook this and it's actually better slightly "under".

When the slice is cold, melt the chocolate in a bowl over a pan of simmering water and spread over the top. Slice into pieces and serve.
